Butter, whole spices, and a touch of Level Lite turn basmati rice into a fragrant side for curries and grilled dishes.
Ingredients
- 2 cups basmati rice
- 3½ cups water or vegetable stock
- 2 tbsp unsalted butter
- 1½ tbsp Miris by Islandmom Level Lite Hot Sauce
- 3 cloves garlic, finely minced
- 1 small onion, finely diced
- 1 cinnamon stick
- 3 cardamom pods, lightly crushed
- 2 cloves
- 1 tsp salt (adjust to taste)
- Juice of ½ lime (optional)
Method

Rinse the basmati rice under cold water until the water runs clear. Soak for 20 minutes, then drain.

In a heavy-bottomed saucepan, melt the butter over medium heat.

Add the cinnamon stick, cardamom pods and cloves. Sauté for about a minute until fragrant.

Add the diced onion and cook until soft and translucent. Stir in the minced garlic and cook for another minute.

Mix in the Level Lite Hot Sauce, allowing it to blend with the butter and aromatics.

Add the drained basmati rice and gently stir for 2–3 minutes so each grain is coated with the buttery spice mixture.

Pour in the water or vegetable stock and add the salt. Bring to a gentle boil.

Reduce the heat to low, cover, and cook for 12–15 minutes, or until the rice is tender and all the liquid has been absorbed.

Remove from the heat and let the rice rest, covered, for 10 minutes.

Fluff with a fork and add a squeeze of lime juice if desired.
