Ingredients

  • 500g chicken (bone-in or boneless), cut into pieces
  • 3 tbsp Miris by Islandmom Level Lite Hot Sauce
  • 1 medium onion, finely sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 sprig curry leaves
  • 1 pandan leaf (optional)
  • 1 tomato, chopped
  • 1 tsp roasted curry powder
  • ½ tsp turmeric powder
  • ½ tsp black pepper
  • 1 cup thick coconut milk
  • ½ cup water
  • 1 tbsp coconut oil
  • Salt to taste
  • Fresh coriander for garnish

Method

  1. Heat coconut oil in a pan and saute the onions until soft and lightly golden.

  2. Add the garlic, ginger, curry leaves, and pandan leaf. Cook until fragrant.

  3. Stir in the roasted curry powder, turmeric, and black pepper.

  4. Add the chicken pieces and cook for 5–7 minutes until lightly browned.

  5. Mix in the chopped tomatoes and cook until they begin to soften.

  6. Pour in the coconut milk and water, then stir in 3 tablespoons of Miris by Islandmom Level Lite Hot Sauce.

  7. Season with salt, cover, and simmer over low heat for 20–25 minutes until the chicken is tender and the curry has thickened.

  8. Garnish with fresh coriander before serving.
